Ginger - 100 gms , Red chilly - 5 nos., Garlic - 6 flakes, Jaggery-50 gms, Tamarind - 50 gms, Black Gram, (Urad Dal) - 2 tsp, Oil-5 tbsp, Asafoetida - ½ tsp, Mustard-4 tsp, Salt - As per taste.
Heat 2 tbsp oil in a pan and fry the ginger, garlic, red chillies and 1tsp of black gram in it. Allow it to cool for some time. Add the jaggery and tamarind to the fried items and grind well in the mixer. Take a frying pan and heat the rest of the oil.
Add the mustard seeds and wait till they splutter. Saute the urad dal and the asafoetida for a minute. Now add the ginger paste and salt and saute till the oil starts separating. The delicious ginger chutney is ready. You can pack it in a small container. It tastes tangy with chapattis, puris, idlis and dosas.
