Ingredients:

Idli batter - 8 scoops, Sesame oil -1 or 2 tsp (to grease idli plate), Left over potato curry - 1 cup

Makes: 8 masala idlis

How to...?

Separate egg yolk and white

Crack an egg onto a bowl. Gently squeeze an empty plastic water bottle using your hands.

Hold the bottle near the yolk and release the squeeze. The yolk goes into the bottle. Squeeze it out onto another plate or bowl.

Party Palate - Stupped Masala Idlis

Method:

  • Mash the left-over potato curry without lumps.

  • Grease idli plates with oil and fill idli batter to half depth in each idli plate.

  • Spread a flat layer of potato masala over the half-filled idli plates.

  • Top with idli batter on the spread masala.

  • Steam the idlis in an idli cooker till whistle. (If using pressure cooker allow steaming for 10 to 15 minutes in low flame without the weight)

  • Cut into halves and serve with mint chutney.

A delicious and healthy starter!
