Hi everyone! Today, we’re going to make a rare Indian sweet dish called Makhana Kheer. Have you heard of it? It’s super tasty and made with a secret ingredient – fox nuts! They’re these tiny puffed seeds that look like popcorn but taste different. Ready to join us on this cooking journey? Let’s go!
Step 1: Getting the Ingredients
First, go with Mom to the kitchen to gather everything we needed. Here’s what we got:
- Makhana (Fox Nuts) – about one cup
- Milk – 4 cups (that’s a lot of milk!)
- Sugar – 2 tablespoons (you can add more if you like it sweeter)
- Cardamom powder – a pinch (it smells so good!)
- Almonds and cashews – for some crunch
- Ghee (clarified butter) – 1 tablespoon
- Saffron strands – a few (they make the kheer look so cool!)
Mom said the ingredients are simple but when they come together, it becomes something special. Couldn’t wait to start!
Step 2: Roasting the Fox Nuts
Next, we poured the makhana into the pan with some ghee. When the ghee melted, we stirred the fox nuts around. They made a crackling sound as they roasted. It was like popcorn popping, but quieter! After a few minutes, the fox nuts turned golden, and we knew they were ready.
Step 3: Making the Kheer
Now, it was time to make the milk super creamy. Mom heated the milk in a big pot, and we helped by stirring it (carefully!). The milk started to bubble and got thicker. That’s when we added the roasted fox nuts. They floated on top like little boats! We let the nuts soak up the milk so they became soft and tasty.
Step 4: Adding the Magic Touch
We sprinkled sugar into the milk and watched it disappear. Then, came the cardamom powder – it smelled like a festival! We also added saffron strands that made the milk turn a light yellow, like sunshine in a bowl. So pretty!
Step 5: Garnishing and Tasting
Finally, we added chopped almonds and cashews to make it extra special. Mom said we could eat it warm or cold, but we were too excited to wait! So, we tried it warm and…WOW! It was sweet, creamy, and the fox nuts were like soft clouds in our mouths.
