Fruity Beetroot Salad

You need: Beetroot-1, Apple – 1, Mangoes-2, Seedless black grapes - 15 to 20, Banana-1, Chikoos-2, Lime juice - to taste

Method: Grate beetroot, peel and dice apple, mangoes and chikoo. Cut grapes into half, slice the banana. Mix all the ingredients together, add lime juice, toss well and serve. This salad can be served chilled if you like.

 

Tri-Colour Salad

You need: Carrots – 2, Capsicum – 2, Paneer cubes - 1 cup, Coriander leaves - 1 sprig, Salt, pepper - to taste.

Method: Peel and cut carrot into small pieces. Deseed the capsicums and cut into small pieces. Take a large bowl and mix the cut vegetable with the paneer cubes. Add salt and pepper and toss well. Garnish with chopped coriander leaves and serve.

Corn Cucumber Salad

You need: Corn kernels - 1 cup, Carrot – 1,  Pomegranate kernels - ½ a cup, Cabbage (shredded) – ¼ Cup, Onion - 1 big sized, Coriander leaves chopped - for garnishing, jeera powder – ¼ teaspoon, Pepper powder - ½ teaspoon, Lime juice ½ tablespoon,  Olive oil - 2 tablespoons,  Salt to taste.

Method: Blanch (immerse in boiling water) corn kernels and drain thoroughly. Peel and dice onion and carrot into cubes of equal size. Mix shredded cabbage, pomegranate kernels and blanched corn into this. Place in a large bowl, add the powders, salt, lime juice and oil and toss well. Garnish with coriander leaves.
