1. Paneer Tikka
Ingredients
Paneer - 1/2 cup (chopped into cubes)
Marinade mix
Yoghurt - 2/3 tbsp.
Ajwain (Omam) - 1/2 tsp,
Tandoori masala powder/paste - 1 tsp
Chilli powder ½ tsp
Lemon juice - 1 tsp
Salt - 1/2 tsp
Veges
Capsicum -1/2
Onion – ½
Tomato – ½
Method:
Dice the vegetables into squares.
In a bowl, mix together all the ingredients given for the marinade mix.
Add paneer cubes and mix well. Ensure that the paneer cubes are evenly coated. Close and refrigerate for an hour or two.
Arrange capsicum, onion, tomato and the marinated paneer in that order in a skewer. Repeat the same order for each skewer.
Preheat oven for 5 mins at 250°C and bake for 8 to 10 minutes.
Alternatively add oil on a flat pan and keep the skewers, turning sides at intervals until golden-brown.
2. Besan Bread Toast
Ingredients
Bread 3 slices
Gram flour (Besan) - 1 cup
Rice flour - 1 tbsp
Carrot - ¼ cup (grated)
Onion - ¼ cup (finely chopped)
Curry leaves - 5 to 6 (finely chopped)
Coriander leaves - 2 tsp (finely chopped)
Salt - 1 tsp
Powders
Chilli powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Hing - a pinch
Method:
Cut the bread slices diagonally.
In a wide bowl mix gram flour, rice flour, carrot, onions, coriander and curry leaves, salt and the powders mentioned.
Add approximately about 1/2 glass of water to form thick batter consistency.
Heat oil in a flat pan.
Dip each slice of bread into the batter. (Ensure sides are also dipped)
Place it on the pan and fry both sides to golden brown.
Serve hot with tomato sauce/butter.
